Lentil Bolognese



I love lentils. They are definitely a 'comfortable' food to eat and a great stand-in for meat. This recipe is probably my most favorite way to eat lentils.

Lentil Bolognese

1 cup lentils
1 onion, diced
2 cloves garlic, minced
3 stalks celery, diced
3 carrots, diced
2 cans Rotel, any variety, undrained
1 T Italian Seasoning
pepper & salt, to taste

Bring 1 cup lentils to a boil in 2-3/4 cups water until soft.
Saute veggies in 1 T olive oil until tender.
Add tomatoes and seasoning and let simmer for 10 minutes.
Add cooked lentils and simmer together for another 10 minutes or so.
Serve over rice.

Speaking of rice (again), I served the Lentil Bolognese over Jasmine rice prepared in the rice cooker. This time, I used 1 cup rice and 1 cup water combined with 1 cup veggie broth (and 1 tsp kosher salt).

Most excellent and so easy!
