White Chicken Chili

~ready to 'slow cook'~
I love this...and, so does everyone else!  Super easy and great for potluck or a cold, winter evening. You can serve this with tortilla chips, sour cream or shredded jack cheese (or all of the above).

White Chicken Chili

1 medium onion, chopped
4 cloves garlic, minced
2 generous tsp ground cumin
2 generous tsp dried oregano
1/2 tsp ground red pepper
3 cans white beans
2 cans Rotel, original
1 7oz can diced green chilies
4 cups veggie broth
3 cups chopped cooked chicken
salt & pepper to taste

Throw all ingredients in a large crock pot and cook on low 7 hours or high 3-1/2 hours.

I boil the chicken (frozen tenderloins or boneless thighs, 3lb bag) in salted water then chop.
