Mom's Spanish Rice

My. Favorite. Meal.  Truly!

This is the one Mom made for me on my birthday.  Or if she felt I needed to feel special.  And I indeed felt special when she made it.

(I'm not sure why Mom called it Spanish Rice, as it's not like others I have seen or tasted. Perhaps she should have called it Italian Rice!)

Mom's Spanish Rice

1 pound turkey bacon, cooked
1 pound ground hamburger, browned & drained
1 small yellow onion, diced (sauteed with hamburger)
1/2 green pepper, diced (sauteed with hamburger)
1 small can of mushrooms
1 large can tomato sauce
1 can Italian-style stewed tomatoes, drained and cut up
2 cups cooked white rice
tomato juice (optional)
salt & pepper

In a large skillet combine meats, onion, pepper, mushrooms, tomato sauce and stewed tomatoes together.  Let cook together for a bit, then add rice.  If it seems a little 'dry', add a bit of the tomato juice.  Simmer together for 10 - 20 minutes, adding salt and pepper, to taste.
