Chicken Noodle Soup

So, it's that time of year.  The weather has really turned chilly, and everyone is catching colds, or worse. We all hate it.

But, we all know what the best remedy is, right?


Homemade Chicken Noodle Soup

Saute in a couple of tablespoons of olive oil one diced medium onion, 3 or 4 diced carrots, 3 cloves minced garlic and 3 stalks diced celery. When all that is soft (about 5 minutes), add 2 quarts of homemade chicken stock. Bring to a boil and add 8 oz uncooked wide egg noodles. Let noodles cook in soup for about 8 - 10 minutes, or until noodles are soft. Add a couple of teaspoons of dried thyme and 2 cups shredded, chopped cooked chicken. Don't forget the salt & pepper while you let the soup simmer for a few minutes prior to service.

Mmmmmmm.


Now, pack up some of that homemade goodness and take it to a sick friend.  They will love you forever, I promise.
