Found this interesting and simple recipe on the internet called Cowboy Casserole for the Crockpot, and we tried it. It was tasty, but could have been a bit more flavorful. So, here's my tweak - cue up the digital campfire and give it a go!
Hendel's Cowboy Stew
1 medium yellow onion, diced
1 lb ground turkey, browned
1 loop smoked turkey sausage, sliced
6 medium potatoes sliced or diced
1 clove garlic, minced or crushed
2 cans ranch beans, undrained
2 cans Rotel
1/2 lb Velveeta, cut into cubes
1 sm. can mushrooms (optional)
1 tsp dried oregano
1 tsp kosher salt
black pepper to taste
Mix all ingredients into large crock - cook on high 4-ish hours, or on low for 8 hours.
