Manhattan-Style Veggie Chowder


There is a lot of good reasons to go vegetarian. No, really, it is a truly wonderful way to increase energy and feel 'leaner' overall. Here is a good article extolling the benefits of eating vegetarian. After reading, you may want to whip up this wonderful soup to get you headed in the right direction!


Manhattan-Style Veggie Chowder

1 tbsp olive oil (for saute)
2-3 cups chopped cabbage
1 sweet onion, diced
2-3 cloves garlic, minced
8 cups veggie broth
1 small can tomato paste
2-3 stalks celery, sliced
1 small-ish zucchini, diced
1 cup diced baby carrots
2 cups diced gold potatoes
1 cup frozen corn
1 cup frozen green beans
2 tbsp italian seasoning
2 tsp kosher salt
fresh ground black pepper,  to taste

In large soup pot saute onion, cabbage, and garlic in oil about 4 minutes (or until soft).

Stir in broth, tomato paste and rest of ingredients.

Bring to a boil, then reduce to simmer. Simmer 30 mins or so, uncovered.
