Southwest Chicken Soup


Southwest Chicken Soup

1 medium sweet onion, diced small
5-6 chicken breasts, cooked and diced
2 cans white beans, drained & rinsed
1 can sweet corn
1 can Rotel, any variety
1 jar prepared salsa verde
4 cups veggie or chicken broth
2 teaspoons cumin
1 tablespoon chili powder
salt & pepper, to taste

Combine all ingredients in a crockpot. Cook on high 4-5 hours, or 8 hours on low.

Serve with sour cream and tortilla strips.
