Special Curry Mix


Curry Spice Mix
from Crescent Dragonwagon
Dairy Hollow House Country Inn Cookbook

1/3 cup coarsely ground black pepper
1/4 cup ground cumin
3 T dry mustard
3 T ground turmeric
3 T best-quality curry powder
1-1/2 T ground cardamom
1-1/2 T ground coriander
1 T ground mace
1 T freshly grated nutmeg
1 T ground cinnamon
1 T ground cloves
1-1/2 tsp cayenne pepper

Combine above into an airtight jar (it will keep up to a year).
Use anywhere curry powder is called for in recipes.
