Turkey Sausage & Tortellini Soup


How 'bout something for the crockpot? This is a new recipe for me - one to try out on my Shabbat guests (read: guinea pigs!).

Turkey Sausage & Tortellini Soup

1 lb breakfast turkey sausage
1/2 yellow onion, diced
2 cups packaged shredded cabbage with carrot slaw
1 cup frozen green beans
2 cans Rotel (I used original style)
1 can condensed French Onion soup
2 32oz. boxes veggie broth
1 can white beans, drained
1 T Italian seasoning
salt & pepper, to taste
1 20 oz. package refrigerated cheese-filled tortellini

Brown sausage and onion on the stove. Transfer to large crockpot and add remaining ingredients, except the tortellini. Cook on high 4 hours or low for 8 hours. 15 minutes prior to service, add tortellini (high setting). Serve with course grated parmesan cheese as garnish.

oh yeah, that's a keeper!
